Instructions:
Place the soup, water, lemon juice, basil, garlic powder, zucchini, broccoli, green pepper slices and chopped onion into a large skillet. Cover the skillet and use medium heat to bring this to a boil.
When it’s to the boil, turn the heat down low and cook for 15-20 minutes. I like to cook this until the vegetables are tender.
Stir in the Parmesan cheese, cover and heat for another 5-10 minutes. Serve in a vegetable tureen or casserole dish. It will have good colors and delicious flavors, and will make a nice vegetable side dish for any meal.
This is a good dish for doctoring; you can fry some meatballs, smoked sausage or cooked chicken to incorporate into it to make a one-dish dinner. This is the way I like it best, as the meat in there helps take my mind off the fact I’m actually eating zucchini.
