Seasoned Calf Fries

Ingredients:
40 male calf testicles 2 tablespoons vegetable oil 1 large onion, chopped 4 garlic cloves, minced 4 ounces pimentos 4 ounces green chili peppers, chopped (optional: some folks use minced jalapeno peppers for more flavor) 1/2 cup parsley, chopped Red wine, enough to cover the calf fries in the skillet Salt and pepper to taste

Instructions:
Clean and boil the calf testicles in salted water 45-60 minutes. Drain and rinse in warm water. Set aside to drain dry. Sauté the fries in the vegetable oil so they’re browned. Add the chopped onion and minced garlic and continue sautéing until the onions are soft and translucent. Add the pimentos, chili peppers or jalapeños, parsley and salt and pepper. Add enough of the red wine to cover the contents of the skillet and continue sautéing until the fries are tender and the wine is reduced to a rich sauce. Serve hot from the skillet with side dishes you’d serve with any other beef dinner. You also could add a flour and water roux to the skillet and make a rich gravy to ladle over the fries. This is considered to be a classy, special treat by many folks and others wrinkle up their nose and wonder how anybody can eat this meal. It’s a mind over matter thing – if you don’t mind, it doesn’t matter. Have a good one! (Oh, and one more thing – you’ve probably eaten them and didn’t even know it. Some butchers use them as a part of the meat when making all-beef hot dogs. Still … have a good one!)
