Instructions:
Preheat your oven to 350 degrees. Using a sharp serrated knife, cut a pocket into the side of each piece of salmon.
In a bowl, combine guacamole, egg yolk, bread crumbs and lemon zest to make stuffing. Stuff fish with avocado mixture; season each fillet with salt and pepper.
Bake for 8 minutes and serve immediately.
