Easy Cheesy No-Bake Cupcakes

Ingredients:
2 cups graham cracker crumbs 1/3 cup melted butter 1/2 cup sugar 2 eggs 1-1/2 packages (8 ounces each) softened Philadelphia cream cheese 1/2 teaspoon vanilla 1 cup sour cream Thawed frozen strawberries or canned cherry pie filling

Instructions:
Use 12 paper muffin cups and insert them into your muffin tin so they’ll hold their shape. Mix together the graham cracker crumbs and melted butter. Press this into the muffin cups. Refrigerate so they’ll set up nicely. Use an electric mixer to beat the sugar, eggs, softened cream cheese and vanilla until you have a nice, smooth mixture. Use a spoon to fill the muffin crusts about 3/4 full with this softened cream mixture. Place this back into the refrigerator until ready to serve. When it’s party or dessert time, remove the chilled cream cupcakes from the refrigerator and spread each with sour cream. Top with the thawed frozen strawberries or canned cherry pie filling. This will give you 12 delicious treats for your family or guests. (I will be available to come by and give these the taste test, to be sure you did them correctly.)
