Do-It-Yourself Gyro Meat

Ingredients:
1/2 cup finely-minced red onion; squeeze out the juice by wrapping it in paper towels 1/2 pound ground lamb 1/2 pound ground beef 1 teaspoon minced garlic 1/2 teaspoon dried oregano 1/2 teaspoon ground cumin 1/2 teaspoon dried marjoram 1/2 teaspoon salt 1/4 teaspoon dried thyme 1/4 teaspoon dried rosemary 1/4 teaspoon black pepper

Instructions:
Mix the ingredients together well. Form into a loaf, cover with plastic wrap and refrigerate for a few hours or overnight. Remove the plastic wrap and bake the meat loaf at 300 degrees for about an hour. Use a meat thermometer to be sure you get an internal temp of 165 degrees. Cool on a wire rack. Cut into thin slices and serve warm in pita pockets. Top with cucumber yogurt sauce. To make this sauce, use 1/2 cup grated cucumbers and squeeze out the juice in paper towels. Stir this into 1 cup plain yogurt and add 1/2 teaspoon garlic powder. Refrigerate the sauce before serving.
