Coleslaw for a Large Group

Ingredients:
(Courtesy of the Cowboys BBQ Team, Rib America Festival) 2 large or 2-1/2 medium bell peppers 1 large or 1-1/2 medium onions 2 cups sweet pickle relish 3 cups vinegar 1/4 cup black pepper 1/4 cup salt 4-1/2 cups sugar 3 quarts Hellman’s Mayonnaise 30 to 35 pounds of raw cabbage or slaw vegetable blend

Instructions:
Puree the bell peppers and the onion(s) in a food processor. Mix pureed mixture, relish, vinegar, seasonings and mayonnaise together until blended thoroughly. The mixture will be a liquid with no mayo lumps. Chop the cabbage or slaw blend to a coarse chop. Add the liquid to the chopped mix or cabbage and serve.
