Sneak Up On You Gizzard Burner Hot Sauce

Ingredients:
1 garlic clove 1 teaspoon kosher salt 1 large egg 1 large egg yolk 1 cup olive oil 2 tablespoons lime juice 2 Scotch Bonnet (habanero) peppers, orange or red, ribs and seeds removed, minced

Instructions:
You’ll need to puree the garlic and salt in your food processor or blender. Next, add the one egg, plus one egg yolk, to the processor. Use a rubber spatula to make sure you get the eggs, garlic and salt well blended. Turn your blender or processor down to low speed and through the small hole in the top slowly add the oil. This will thicken, which is what you want. Now add the lime juice and be sure it’s mixed in well. You can then pour this mixture into a bowl and stir in the minced peppers, or you can just drop the minced peppers into the mixture and let the blender mix them. Use this sparingly, as it will be hot, hot, hot! It won’t look like other barbecue sauces and your guests will tend to put too much on their servings.
