Florida Cracker Dinner
Skinny Cooks

Ingredients:
3 cups water 1 teaspoon dehydrated onion flakes (because I didn’t have a real onion) 3/4 teaspoon garlic powder (ditto on not having the real thing) 1/2 teaspoon crushed red pepper flakes 3 cups Minute Rice 1 (15.5 ounces) can of Great Northern beans 1/2 of a (25 ounces) can of Collard Greens, with some of the seasoned broth 2-3 cups of baked ham cut into bite-size pieces 1 can of condensed Cream of Mushroom Soup 1/2 soup can of water

Instructions:
Bring the water to a boil. While it’s getting hot, stir in the onion flakes, garlic powder and red pepper flakes. Add the Minute Rice, stir in, cover and remove from the heat. When the rice has absorbed the liquid, stir in the beans with their liquid and half of the can of collard greens with some of their liquid. Add the baked ham pieces and stir in. Bring up to heat so you’ll have a good, warm meal. Use a microwave safe bowl to heat up the can of condensed cream of mushroom soup to which you’ve added one-half a soup can of water. This makes a good, quick gravy to slather on each serving. It’s nothing fancy, but it’s a good, quick and easy meal.
