Old South Carrot Cake

Ingredients:
From 200 Treasured Cake and Frosting Recipes, Kentucky 2 cups all-purpose flour 1 teaspoon ground cinnamon 2 cups sugar 4 eggs 1 teaspoon baking powder 1 cup vegetable oil 1/4 teaspoon baking soda 2 cups grated carrots 1/4 teaspoon salt

Instructions:
Combine dry ingredients. Stir gently and set aside. Combine eggs and oil, beating well. Fold in dry ingredients and carrots. Spoon batter into 3 greased and floured 9-inch cake pans. Bake at 375 degrees for 25 minutes or until cake tests done (cake layers will be thin). Cool 10 minutes in pans. Remove from pans and cool completely. Deluxe Cream Cheese Frosting 1/2 cup butter or margarine, softened 2 teaspoons vanilla 1 cup chopped pecans 8-ounce package cream cheese, softened 1 cup flaked coconut 16-ounce package powdered sugar Combine butter and cream cheese. Cream until light and fluffy. Add sugar and vanilla, mixing well. Stir in pecans and coconut. Spread frosting between layers and on top and side of cake. All materials courtesy of Quail Ridge Press.
