Ingredients:
Makes eight servings 12 ounces firm silken tofu 15 ounces solid pumpkin 1/2 cup brown sugar 1/4 cup sugar 1 teaspoon cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 9-inch unbaked pie shell

Instructions:
Preheat oven to 425 degrees. Drain tofu and purée in a blender or food processor until smooth. Whisk together the pumpkin and sugars in a large mixing bowl. Whisk in the spices and puréed tofu. Pour the mixture into the pie shell and bake for 15 minutes. Lower the oven heat to 350 and bake an additional 40-50 minutes, until filling is set and pie crust is cooked throughout. Chill before serving. Praline Topping (optional) 1 cup chopped pecans 1/4 cup firmly packed light brown sugar 3 tablespoons margarine, melted In small bowl, combine chopped pecans and light brown sugar with melted margarine. Sprinkle on pie before or after chilling, as desired. Per 1 slice serving: 254 calories, 6.5 grams fat (1.6 grams saturated fat), 5.9 grams protein (3.7 grams soy protein), 48 grams carbohydrates, 296 mg sodium, 0 mg cholesterol, 0.7 gram dietary fiber
