Instructions:
Be sure to drain the tuna well as you don’t want excess oil or liquid in this salad. Also drain off the olive liquid, as it’s not needed, either.
Combine the ingredients in a large bowl and toss to get well distributed. Cover with plastic wrap and set in the refrigerator for a couple of hours or even overnight.
Cut the tomatoes as mentioned above. Stuff well with the salad and serve a delicious salad entrée.
If you want to use this salad as a sandwich filling, you’ll find that adding a slice or two of tomatoes will help make it a special sandwich all will enjoy. You can also put lettuce on the sandwich to add some color and another texture.
This will fancy it up a bit and you can raise the price if you’re selling them. In this case, also use some fancy whole grain bread, rye bread or whole grain pita pockets.
A friend adds Swiss or mozzarella cheese to this sandwich. If you make enough additions, it will begin to look like a Dagwood special – and you know that Dagwood is a sandwich expert.
