Old-Fashioned Spinach Loaf

Ingredients:
2 cups of cooked, chopped spinach, drained 2 eggs beaten 1 cup soft breadcrumbs 3 tablespoons minced onion 1 cup ham, chopped into very small pieces 1 teaspoon salt 1/8 teaspoon pepper 1/8 teaspoon paprika 1 tablespoon melted butter 2 tablespoons milk, more if needed so you can make the ingredients into a loaf Grated cheddar cheese Hardboiled egg, sliced

Instructions:
Cook the spinach and set aside to drain. Use a mixing bowl to assemble the dish. Beat the eggs very well. Add the breadcrumbs, cooked and drained spinach, onion, chopped ham, salt, pepper, paprika and butter. Stir this together very well. Add the 2 tablespoons of milk and mix in with your hands. You want to get the ingredients moist enough to cling together before you put them into your loaf pan. Place the ingredients into a greased loaf pan. Bake at 375 degrees for 20 minutes. Remove from the oven and top with the grated cheese. Return to the oven and bake another 10 minutes. When you remove the loaf from the oven this time, arrange the slices of hardboiled egg on top, for a nice garnish. Slice and serve. Refrigerate any leftovers so you can warm them up as needed.
