2 cups cooked rice, chilled 2 cups canned pineapple chunks, drained 1 cup maraschino cherries, sliced 1-1/2 cups miniature marshmallows 1 cup heavy cream 1/4 cup confectioners’ sugar 1/4 teaspoon almond extract 1 teaspoon vanilla extract

The day before serving, toss the rice, pineapple, maraschino cherries and marshmallows and refrigerate overnight. Just before serving, whip the cream with sugar and extracts until stiff. Fold the two mixtures together and serve. If you don’t want to mess with whipping the cream, buy the frozen kind in a plastic tub and forget the extracts.
