Tasty Early Summer Orange Cookies
Skinny Cooks

Ingredients:
1 cup butter, softened 1/2 cup white sugar 1/2 cup brown sugar 1 egg 1/4 cup orange juice 1 tablespoon grated orange peel 1 teaspoon vanilla 3 cups flour 1/2 teaspoon salt 1/4 teaspoon baking soda 1/2 cup walnuts, chopped

Instructions:
In a mixing bowl add the softened butter, both sugars and cream together. Then add the egg, orange juice, grated orange peel and vanilla. Mix this together very well. In a small bowl mix together the flour, salt and baking soda, then add this to the creamed mixture in the mixing bowl. Stir in the chopped nuts. Now you have your batter ready to make a couple of cookie dough rolls, or logs. Make the dough logs a couple of inches across, wrap them in plastic wrap and put them in your refrigerator to let them get cold and stiff. Get the cold dough logs out of the refrigerator and cut them into slices about the size of poker chips. (And don’t tell me you’re eating cookies, but you’ve lived a pure life and don’t know what poker chips are.) Place the dough slices on a greased cookie sheet and bake at 375 degrees for 12-15 minutes. This will likely give you a return of eight dozen cookies. Give some to your friends who look pale and run-down. Put some in your freezer. Or, set your kids up with a cookie stand and help them get into business.
