Fire & Ice Salsa
Makes 3 cups

Ingredients:
3 cups seeded and finely chopped watermelon 1/2 cup finely diced green peppers 2 tablespoons lime juice 1 tablespoon chopped cilantro 1 tablespoon finely sliced green onion 1-2 tablespoons finely diced jalapeno peppers

Instructions:
Combine ingredients; mix well and cover. Refrigerate at least 1 hour before serving. (For a fun presentation, preserve the bowl shape of one end of the watermelon while cutting, scoop it out and serve the salsa in this.)
