No-Bake Rose-Red Valentine Pie

Ingredients:
1 package strawberry gelatin 1/2 cup sugar 1 cup boiling water 1 can evaporated milk, refrigerated overnight Red food coloring 2 (9-inch) graham cracker piecrusts, or bake your own in heart-shaped cake pans Whipped cream Red granulated sugar for decorating

Instructions:
Mix together the gelatin, sugar and boiling water; let cool. Use your electric mixer to whip the cold evaporated milk until it firms up. Use a spatula to fold the gelatin mixture into the evaporated milk. Once combined, you can adjust the red color of the pie filling by adding one or more drops of food coloring. Turn the filling into the piecrusts. Spread the whipped cream over the top of the pies. Put the pies in the refrigerator until serving time. Just before serving, sprinkle a little of the red granulated sugar over the whipped cream. I call this a Valentine’s Day pie, but you may want to make it every now and then for kicks and grins.
