Barbecued Chicken Loaves
Skinny Cooks

Ingredients:

3 (1 lb.) loaves frozen bread dough set out to thaw
1/4 c. butter
2 c. chopped onion
1 c. chopped bell pepper, any color
2 garlic cloves, minced
1 lb. shredded cooked chicken
1/3 c. chopped green onion
1/2 c. chopped black olives
1/4 to 1/2 c. barbecue sauce, the kind you like best
1 c. shredded mozzarella cheese
1 c. shredded cheddar cheese, blend these two cheese together
Melted butter

Instructions:

Sauté in the 1/4 cup of butter the onion, bell pepper, garlic, shredded chicken, green onions and chopped black olives.

When the onion, bell pepper and onions are softened add the barbecue sauce. Cover and simmer this for ten minutes.

Roll out the thawed bread loaves and cut each loaf into quarters. Put about a quarter-cup of the filling on each piece of rolled out dough. Put about a tablespoon of the blended shredded cheeses on each.

Wet the edges of the dough, fold them over the filling and pinch them closed for baking. Bake on a greased baking sheet and brush each with the melted butter. Bake at 350 degrees for about 30 minutes. Brush with more melted butter and serve warm.
