Onion Mushroom Bake with Sherry
Skinny Cooks

Ingredients:

4 Vidalia onions, peeled
1 lb. fresh white mushrooms, cleaned
1 T. water
3 T. butter
3 T. Sherry
1/4 c. seasoned Italian breadcrumbs
1/4 c. crushed corn flakes
1 T. grated Romano cheese
1 T. grated Parmesan cheese
1 T. bacon bits
1 T. melted butter
Salt and pepper

Instructions:

Peel the onions and slice an inch-deep X into the bottom of each one. Place into the casserole dish. Arrange the cleaned mushrooms among the mushrooms. Sprinkle on a pinch of salt and pepper and dot each onion and the mushrooms with the butter. Pour the water and the sherry over the onions and mushrooms.

Cover and bake at 350 degrees for about 35 minutes.

Mix together the breadcrumbs, crushed Corn Flakes, Romano and Parmesan cheeses, bacon bits, melted better and salt and pepper to taste. Put this over the baked onions and mushrooms in the casserole. Leave uncovered and bake another 15 minutes until the topping is browned and crisp. Serve and enjoy.
