Instructions:
Mix the butter, cream and flour together to make a chilled dough. Put the dough in the refrigerator for an hour or so to make it firm. Roll out the dough on a floured work space, about 1/8-inch thick. Cut the dough into uniform circles using the rim of a water glass or a cookie cutter.
Sprinkle the cut cookies with sugar on both sides. Place on your baking sheet and use a fork to prick some holes in each cookie, just like those you see on ice cream sandwich cookies.
Preheat your oven to 375 degrees and bake the cookies for 5-6 minutes. Set aside to cool.
To make the cream filling, combine the butter, confectioner’s sugar and the cream; mix well. Make it any color you want by stirring in two or three drops of food coloring.
Spread on one side of a cookie and stack with another cookie like a sandwich. Then, you’ll have a nice little snack to go with a glass of milk or a cup of coffee.
