Oatmeal Raisin Cookie Muffins
Raisins: The perfect snack for kids

Ingredients:
Prep time: 10 minutes
Cooking time: 12-14 minutes
Makes 18 mini-muffins
1/2 cup California raisins
1/2 cup all-purpose flour
1/2 cup quick oats
1/3 cup sugar
3/4 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup low-fat vanilla yogurt
1/3 cup canned pumpkin
2 tablespoons vegetable oil
1 egg white

Instructions:
Preheat oven to 400 degrees and coat 18 mini-muffin tins with nonstick cooking spray.
Stir together raisins and all dry ingredients in medium bowl. In separate bowl, mix together remaining ingredients and add to dry ingredients, stirring just until incorporated. Spoon into prepared muffin tins and bake 12-14 minutes, or until toothpick inserted into center comes out clean.
(Tip: Kids can help by measuring and stirring in ingredients.)
