Sausage and Spinach Soup

Ingredients:
Prep time: 5 minutes
Cooking time: 20 minutes
Makes five servings
1/2 pound sweet Italian pork sausage, cut into 3/4-inch slices 4 cups Swanson Chicken Broth (regular, Natural Goodness or Certified Organic) 1/2 teaspoon dried oregano leaves, crushed 1 medium onion, chopped 1 medium carrot, sliced 2 cups coarsely chopped fresh spinach leaves

Instructions:
Spray medium saucepan with cooking spray and heat over medium-high heat for 1 minute. Add sausage and cook until well-browned, stirring often. Pour off fat. Stir in broth, oregano, onion and carrot. Heat to a boil. Reduce heat to low. Cover and cook for 10 minutes, or until vegetables are tender. Stir in spinach and cook for 1 minute more. All materials courtesy of Swanson Broth.
