Sausage, Beans and Rice
Skinny Cooks

Ingredients:
5 bratwurst or country sausage links, pierced and boiled as directed above, set aside 3 cups water 4 celery ribs, chopped 1 medium onion, chopped 1 ( 7 ounces) can of mushroom pieces, drained 1/4 teaspoon garlic powder 3 cups Minute Rice 1 (15 ounces) can of butter beans with their liquid 1/3 cup barbecue sauce, the kind you like best

Instructions:
Pierce and boil the sausage links; you’ll prepare the rice in another saucepan. Place the 3 cups water, chopped celery, chopped onion, drained mushroom pieces and the garlic powder in the pan and bring to a nice simmer. Continue simmering until the celery pieces are tender to the bite. Remove from heat, stir in the Minute Rice, cover and set aside for 5 minutes. At the end of the five minutes when the water is absorbed fluff the rice and veggies with a fork. Using a microwave-safe bowl, place the butter beans with their liquid and the barbecue sauce into the bowl and stir to get the beans nicely coated with the sauce. Add the sausages you have pierced and boiled. Cover with plastic wrap and zap at full power in your microwave for approximately 8 minutes. To serve, place the rice with veggies on a dinner plate and top with sausage links and barbecue butter beans. This makes a tasty meal and can be increased in proportion to serve a crowd.
