8-inch flour tortillas 3-inch thin fried hamburger patties Pepper jack cheese Salsa

Optional: You can use other meats to make similar treats. Iíve been using cold sliced turkey lately to save prep time. Hereís an old Mexican trick to handling flour tortillas so they wonít split or tear. Heat your sandwich grill so itís nice and hot. Lay a flour tortilla on the grill, then cover it with a linen towel that youíve held under the water faucet. Wring out the extra water so itís just damp. Lay the towel on the tortilla and close the grill lid. Let it steam about 30 seconds and youíll be able to bend and fold the tortilla in any shape you want. Lay the fried hamburger in the center of the tortilla. Place a slice of pepper jack cheese on the patty. Then, put about a teaspoon of salsa on top of the cheese. Pull or fold the sides of the tortilla up over the contents of the tortilla, making a nice round pocket. Lay the pocket on the grill and close the lid over it. Grill for maybe a minute, and youíll have a nice sandwich pocket which will hold its shape. Youíll find that these make delicious and handy snacks. Iíve even made some up, wrapped them in plastic and placed them in the refrigerator for later use. When a snack was in order, I popped them into the microwave for 30 seconds. Youíll get a lot of good out of these hot little jewels.
