Optional: You can use other meats to make similar treats. I’ve been using cold sliced turkey lately to save prep time.
Here’s an old Mexican trick to handling flour tortillas so they won’t split or tear. Heat your sandwich grill so it’s nice and hot. Lay a flour tortilla on the grill, then cover it with a linen towel that you’ve held under the water faucet. Wring out the extra water so it’s just damp. Lay the towel on the tortilla and close the grill lid.
Let it steam about 30 seconds and you’ll be able to bend and fold the tortilla in any shape you want.
Lay the fried hamburger in the center of the tortilla. Place a slice of pepper jack cheese on the patty. Then, put about a teaspoon of salsa on top of the cheese. Pull or fold the sides of the tortilla up over the contents of the tortilla, making a nice round pocket.
Lay the pocket on the grill and close the lid over it. Grill for maybe a minute, and you’ll have a nice sandwich pocket which will hold its shape.
You’ll find that these make delicious and handy snacks. I’ve even made some up, wrapped them in plastic and placed them in the refrigerator for later use.
When a snack was in order, I popped them into the microwave for 30 seconds. You’ll get a lot of good out of these hot little jewels.
