Instructions:
Cut up the groundhog and soak in salt water half a day. Dry the pieces with absorbent towels. Dredge the pieces in flour seasoned with salt and pepper and fry in vegetable oil, just like frying a chicken.
You may add some paprika to the seasoned flour, so the pieces will have a nice golden brown color when properly fried. Don’t crowd the pieces in the skillet.
