Most groundhog cooks agree that barbecuing is the best way to prepare older groundhogs. Again, soak the groundhog pieces in salt water. Drain and rinse off the salt water. Stew or parboil the pieces in a covered pot until well done. Let cool, then pick the meat off the bones.
Return the pieces of groundhog meat to a pot and add your favorite barbecue sauce. Heat through to get everything nice and warm. Serve on fresh buns and enjoy tasty sandwiches.
