Instructions:
Start with cold salt water in a pot, add the groundhog and bring the pot to a boil. Boil for 15 minutes. Toss out the hot water and rinse the groundhog. Then, starting with new cold salt water, parboil again but don’t cook it all the way. Rinse.
Put the parboiled groundhog into an open roaster and roast at 400 degrees for about 20 minutes, until it’s nice and brown. For extra flavor, add a package of dehydrated vegetable soup mix to the water in the roasting pan. You can also add sliced onions to the roasting water.
When the meat is half-roasted, add some sweet potatoes to the pan. Roast until the potatoes are done to make a meal.
