Instructions:
Preheat your oven to 350 degrees. Use some shortening to grease and flour two 8-inch baking pans. Use an electric mixer with a large bowl to start the process. Beat the shortening and sugar to get it mixed together really well.
Add the eggs, one at a time, being sure to beat the heck out of the batter after you add each egg. Stop the mixer and add the following: boiling water, cocoa, flour, baking soda, salt and vanilla extract. Now, really beat the heck out of it to get a nice, smooth batter.
Pour the batter into the prepared pans and bake about 30 minutes, until cake is done in the middle. Let the cake cool on wire racks before spreading this icing on it:
Butter Icing
3 tablespoons butter, softened
1-1/2 cups powdered sugar
1-1/2 tablespoons milk
1-1/2 teaspoons vanilla extract
4 drops red food coloring
Use a small mixing bowl and beat butter and sugar until fluffy. Add the milk, vanilla and red food coloring and beat until you have a smooth icing. This will give you a nice pink color icing, which will be tasty.
