Aunt Rascal’s Raisin Pudding

Ingredients:
1/2 cup sugar 1 egg 2 Tablespoons melted butter 1/2 cup milk 1 cup flour 1 teaspoon baking powder 1/2 teaspoon each of: baking soda, salt, ground cloves, nutmeg, ginger and allspice 1 cup seedless raisins

Instructions:
Using an electric mixer, start by mixing the sugar and egg together. Add the melted butter and milk. Stir in the flour with the baking soda, salt, cloves, nutmeg, ginger and allspice mixed in. Add the raisins and turn out the mixture into a buttered casserole dish. Topping 1 cup brown sugar 2 cups boiling water 2 tablespoons melted butter Combine these three ingredients and pour over the batter in the casserole dish. Bake at 325 degrees for about 45 minutes. Check it once in a while to make sure it doesn’t get too brown. Serve warm from the oven and enjoy. I’ve always been a fan of raisin pie and I think this is even better. You may want to put a dollop of whipped cream on top of each serving just to make it a special presentation. You’re in for a tasty treat, brought to you by a woman rascal.
