Instructions:
Form the ground lamb into a square and make it approximately 1-3/4 inches thick. Take slices off the square about 1-3/4 inches wide. This will give you nice square logs of ground lamb.
If you’re doing this in a skillet, brown on all sides then cover the skillet to finish frying so they will be thoroughly cooked through. If cooking on your charcoal or gas grill, put some aluminum foil on the grill and place the logs on the foil. Cover the grill so they will cook through.
To make the mint sauce, just use a fork to “smoosh” up the jelly and stir in the chopped mint and the grated orange peel. Make sure the mint and orange peel are well distributed in the jelly. This will be like a new-flavor marmalade.
When the logs are done place each in a hotdog bun and slather on some of the mint sauce and serve hot off the grill. These are really good sandwiches and a fun way to enjoy lamb.
