Hamburger and Eggplant Casserole

Ingredients:
1 pound hamburger 2 tablespoons vegetable oil 1 medium eggplant, cut into 6 slices (don’t remove skin) 1/3 cup flour Salt and pepper 1/4 cup olive oil 2 cans tomato sauce 1 teaspoon oregano 1 tablespoon Parmesan cheese 1 cup grated cheddar cheese

Instructions:
Make your six hamburger patties and brown in the vegetable oil. Set aside. Slice the eggplant into six thick slices. Don’t remove the skin. Dredge in the flour seasoned with salt and pepper. Use another skillet and brown the slices in olive oil. Place the browned eggplant slices into a casserole dish. Top each with a browned hamburger patty. Pour on the tomato sauce to cover the eggplant and hamburger stacks. Spread the oregano, Parmesan cheese and finally the grated cheddar over the top. Bake in a preheated oven at 300 degrees for 30 minutes or a little more. This makes a tasty meal and the leftovers are delicious, as well. Enjoy.
