Instructions:
Start by placing the processed ham into a big bowl. Run the carrots and the onions through the food processor at the same time. Dump these on top of the ham and squeeze them around to mix them into the ham.
Crush the crackers and 2 leftover biscuits, and lay them on top of the meat and carrots and onions mixture. Break two jumbo eggs into the bowl and get your hands in there and really mix all this together very well. Do not add any spices; this will be perfect just with this mixture.
Form into patties and place under the broiler. When the patties begin to look golden, with maybe a little brown on the edges, turn them over and repeat the broiling.
It will amaze you just how delicious these will be. I never add spices or condiments; if you want condiments, try a warm cheese sauce, horseradish sauce or mustard. But, personally I don’t want to cover up the taste of good, honest farm-raised and cured ham.
