Cranberry Bread
Skinny Cooks

Ingredients:
2 cups flour 1 cup sugar 1-1/2 teaspoon baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1/4 cup butter or margarine 1 egg beaten 1 teaspoon grated orange peel 3/4 cup orange juice 3 cups chopped cranberries 1/2 cup chopped walnuts or pecans

Instructions:
Make this in a large mixing bowl. Place the dry ingredients from the flour through the baking soda into the bowl and stir to mix. Use a pastry cutter to work the butter or margarine in to make a rough texture mixture. Add the egg, orange peel and orange juice and stir to get the dry ingredients moist. Fold in the chopped cranberries and chopped walnuts or pecans. Bake at 350 degrees in a greased loaf pan. It will take an hour or a little more to get the bread baked through. Be sure it’s done in the center, by inserting a toothpick that will come out clean. Here’s a little trick: Take the loaf of bread out of the pan and let it cool on a wire rack. You can also drizzle this with some powdered sugar icing for an extra kick in flavor. Readers with questions or comments for Dave Kessler may write to him in care of this publication.
