Instructions:
Mashed potatoes or hot dog buns, whichever you prefer as the base
Bake this in a greased casserole dish. Make the casserole beginning with the sliced hot dogs on the bottom. Combine and mix together the beans, chopped onion, chopped sweet pepper and tomato sauce; pour this mixture over the hot dogs.
Bake at 350 degrees for approximately a half-hour. While this is baking you can heat up the mashed potatoes if you’re going to serve over potatoes, or you can toast and slice the hot dog buns if you’re going to use those as the base.
When ready to serve, just place the mashed potatoes or the toasted hot dog buns on the plate and ladle some of the casserole over them. This makes a nice, filling meal and a tasty one, too.
This is a short-form recipe which can be multiplied as many times as you need to easily feed any-size crowd. It’s a fun meal for picnickers, and you’ll want to make a pretty big batch as their appetites will swell on a sunny spring day.
