2 cups all-purpose flour 3/4 cup sugar 1/2 cup butter, softened 2 eggs 1 teaspoon baking soda 1/2 teaspoon salt 1 tablespoon grated orange peel 1 teaspoon vanilla 1 cup mashed ripe bananas 1/4 cup orange juice 1 cup flaked coconut 3/4 cup chopped macadamia nuts or walnuts

Preheat your oven to 350 degrees. You’ll need your electric mixer and a mixing bowl in which to make up this recipe. Place the flour, sugar, butter, eggs, baking soda, salt, orange peel and vanilla into the bowl and mix well. Add the bananas and orange juice and mix some more to get a nice heavy or thick batter. Just use a spoon to stir in the coconut and chopped nuts, and place this batter into your small loaf pans. Lightly grease the loaf pans with butter. Bake about 30 minutes and test to be sure the bread is baked in the middle. When the bread is cooled, slice and serve with soft butter. If you want to make it really ritzy, stir some powdered sugar into the butter to make a quick icing or sweet topping for the slices of bread. It will be scrumptious.
