Orange Stuffed Peppers
Skinny Cooks

Ingredients:
2 orange peppers (you can use any color) 2 pounds ground beef 1 medium onion, chopped A liberal sprinkling of garlic powder 1-1/2 tablespoons of Worcestershire sauce 14-ounce can of diced tomatoes with onions A grinding of black pepper Shredded cheddar cheese

Instructions:
Cut the tops off the peppers and remove seeds and inside pulp. Set these open side-up in a cooking pot and fill the peppers with water, then fill the pot with enough water to come up two-thirds of the way on the peppers. Cover and bring to a boil for 30-35 minutes. Boil the ground beef and pour off the water and fat. Put the drained ground beef into a skillet and add the chopped onion, garlic powder, Worcestershire sauce, diced tomatoes and ground black pepper to the ground beef. Stir well and bring to a nice simmer for 20-30 minutes. Remove the boiled peppers from the water and place in a bowl or on a serving plate. Spoon the cooked ground beef mixture into the pepper and also put some of the ground beef mixture on the plate around the pepper. Put a bunch of the shredded cheddar cheese on top of the stuffed pepper and also on the ground beef around the pepper on the plate. Cover with plastic wrap and heat in the microwave on high power for 8-10 minutes. Serve hot from the microwave. The cheese will be melted, the pepper will be tender and the flavor will be robust. This makes a nice meal. Readers with questions or comments for Dave Kessler may write to him in care of this publication.
