Apple Cream Pie

Ingredients:
Pie pastry 3/4 cup sugar 2 tablespoons flour 1 cup sour cream 1/2 teaspoon vanilla 1/8 teaspoon salt 1 egg, well beaten 2 cups finely-chopped apples Topping 1/3 cup sugar 1 teaspoon cinnamon 1/3 cup flour 1/4 cup butter

Instructions:
Line your pie plate or pan with the pie pastry. Preheat your oven to 400 degrees. Make the filling by combining the sugar and flour. Add the sour cream, vanilla, salt and beaten egg. Beat all this together until you have a nice lump-free filling. Then, stir in the finely chopped apples and combine very well. Pour into your unbaked pie pastry and bake at 400 degrees for 15 minutes; then, turn down the heat to 325 degrees and bake for another 30 minutes. Remove from the oven. While this is baking, combine and mix together the sugar, cinnamon, flour and butter. You’ll get a nice, crumbly streusel. Spread this over the pie and return to the 325-degree oven for another 20 minutes. Let cool before slicing and serving. This is good as cold leftover pie, too – if you’re lucky enough to have leftovers.
