Baked Yam & Apples

Ingredients:
1 can of yams with juice (yams and sweet potatoes are interchangeable) 2 apples, peeled and cut in many wedges 1/2 cup orange juice 1-1/2 tablespoons brown sugar 1 teaspoon cinnamon 2 teaspoons lemon juice

Instructions:
The canned yams have already been cooked, so are easy to work with; cut them into slices about the thickness of three poker chips. A little more or a little less thickness works just fine, so don’t sweat the slicing. Peel and core the apples and cut them into several wedges. Put the yam slices and the apple wedges into your casserole dish. Mix together the orange juice, brown sugar, cinnamon and lemon juice. Pour this over the yams and apples. Bake at 350 degrees. Test the apple slices with a fork to determine when they’re baked enough to be soft. When they are soft you’ll have done your job, and are ready to get down to some tasty eating. Marshmallows: Put some butter slices on the dish and put a cover on the casserole dish. Aluminum foil is fine for this. After the baking is complete, remove the foil and spread some marshmallow on top. Slip this under the broiler long enough to get the marshmallows golden brown. Pecan topping: Mix 1/4 cup flour, 1/4 cup packed brown sugar, 1/4 cup butter and 1/4 cup chopped pecans. Spread this on top of the casserole before baking. Raisins: You can stir some raisins into the casserole before baking. Golden raisins would be a nice addition, but regular dark raisins work just fine. You’ll enjoy this tasty fall casserole.
