Use a large bowl and your electric mixer when making the filling for this dessert. Start by mixing together the mascarpone cheese and sugar. Then, add the coffee liqueur and vanilla extract.
In another bowl beat the whipping cream until it forms stiff peaks. Fold this into the mascarpone mixture.
Use a glass casserole dish to build the dessert. Lay half the ladyfingers on bottom. Sprinkle on half the coffee. Spread half the mascarpone mixture on next, then add half the grated chocolate. Repeat for the second layer.
Cover and refrigerate overnight. Just before slicing and serving, sprinkle with confectioner’s sugar. This is a wonderful treat you’ll enjoy very much.
