Cherry Nut Bread
Skinny Cooks

Ingredients:
1/2 cup vegetable oil 2 cups sugar 2 eggs 1 teaspoon baking powder 2 teaspoons baking soda 1 teaspoon salt 16 ounces sour cream 1/2 cup Maraschino cherry juice 4 cups flour 1 cup Maraschino cherries, chopped 1 cup walnuts, chopped

Instructions:
You’re going to bake this at 350 degrees, so get the oven going so it will be just right when you put the bread in there on the middle rack. In a mixing bowl combine the vegetable oil, sugar and eggs and mix them well. Add the baking powder, baking soda and salt and continue mixing. Add the cherry juice and the sour cream to the mixing bowl and combine it well. Begin adding the flour a little at a time while continuing mixing. Add the chopped Maraschino cherries and chopped walnuts, and mix so everything is well blended. You’ll need to grease two loaf pans and then divide the batter between them. Angelgirlpj advises that you bake the bread 50-60 minutes. To be sure it’s done, stick a toothpick into the center of the baked bread and if it comes out clean, you’ve completed your job. Let cool before slicing and serving. You’ll be a hero, for sure. Readers with questions or comments for Dave Kessler may write to him in care of this publication.
